春会

桜咲くか咲かないかのギリギリの季節。

ある美容師ご夫婦の新居祝い&春会

にケータリングフェットさせていただきました。

シンプルでスマート、ちょっとエッジが効いた空間に人が集まっています。

食卓を囲んでいます。

本日のメニューは圧倒的春意識。

・そら豆とゴルゴンゾーラのポテトサラダ

・春の豆　アンチョビミモザ

・イカのセート風トマト煮込み　押し麦のマリネ

・レーズンとナッツのレバーパテ

・新玉ねぎのオーブン焼き

・フォカッチャも焼いて

メインにはポートランドの名店らしい「ナヴァー」のナヴァーチキン。

が東京にできてたので、それをたまたま食べたのを思い出して再現。

ローストしたパプリカとアーモンド、スパイスはなんとなく思い出しながら、

結構、味、近いんじゃないかと思っている。

ケータリング先のお皿や空間で料理の雰囲気がその場でガラリと変わる。

これはケータリングやってて面白いとこです。

ぶっつけ本番でコーディネートできるのはオシャレ夫婦だって確信があってからこそなんですけど。
